What screams Christmas in Australia more than a glazed ham, cooked prawns and a Pav? Well the growing trend of Christmas slices, thats what!! I’ve seen Crunchie, MarsBar, Choc mint slice, you name it the different slice flavours are out there. But what I haven’t seen is Raffaello Slice.

What makes this slice stand out from all the rest?

Well, because of the Raffaello chocolates, of course! These white chocolate treats consist of a whole almond surrounded by a layer of smooth, creamy coconut filling, all encased in a crispy wafer shell. The outer coating is then rolled in shredded coconut, giving it a soft, delicate texture and a rich, indulgent flavour. The perfect addition to a Christmas Slice!

This no-bake slice is a delightful combination of textures, thanks to the crunchy digestives, Scotch Finger biscuits, and crispy rice bubbles. The addition of roughly chopped Raffaello chocolates brings a sweet, creamy element that perfectly balances the crunch. Whether you're looking to make something special for a family gathering, a treat for yourself, or an indulgent snack to share with friends, this dessert is a winner every time.



What you will need

Yields: 20 squares

Ingredients:

  • ½ pack of Scotch Finger Biscuits

  • ½ pack of Digestive Biscuits

  • 1 can of Sweetened Condensed Milk

  • 150g Unsalted Butter

  • ½ cup Shredded Coconut

  • 1 cup Rice Bubbles

  • 15 Raffaello Chocolates (halved, with another 10 for topping)

  • 1 block of Cadbury White Chocolate

  • Christmas sprinkles

Method:

1. Prepare the Biscuits

Start by crushing your biscuits. Pop the Scotch Finger and Digestive biscuits into a blender or food processor and blitz them until they’re a fine crumb. This is where all the texture starts, so don’t skip this step!

2. Combine the Dry Ingredients

In a large mixing bowl, add the biscuit crumbs, shredded coconut, rice bubbles, and halved Raffaello chocolates. Gently mix everything together so that the ingredients are evenly distributed.

3. Add the Wet Ingredients

Melt the unsalted butter in a saucepan or microwave, then pour it into the dry mixture. Stir everything until well combined.

4. Incorporate the Condensed Milk

Pour in the can of sweetened condensed milk, and mix again until everything is fully incorporated. At this stage, the mixture should be thick and dough-like, almost like cookie dough. It should hold together well but still be slightly sticky.

5. Press Into the Pan

Line a brownie or square baking pan with parchment paper. Press the mixture firmly into the base of the pan, ensuring it’s evenly spread out. Pop it into the fridge and chill for 1-2 hours, or until the slice is set.

6. Top with White Chocolate

While your slice is chilling, melt the Cadbury white chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth. Once the slice has set, pour the melted white chocolate over the top, using the back of a spoon to spread it evenly across the surface.

7. Finish with Raffaello

Take the remaining 10 halved Raffaello chocolates and place them evenly over the slice. This adds a gorgeous finishing touch and an extra burst of coconutty, creamy goodness.

8. Set and Serve

Return the slice to the fridge and allow it to set for at least 4 hours, or overnight for best results. Once it’s fully chilled, slice it into squares and enjoy the crunchy, creamy, sweet goodness!
